This no-bake Raw Peppermint Slice is layered with a rich nutty base, silky peppermint cream and a glossy raw chocolate topping. It’s freezer-set, refined sugar free and the perfect nourishing treat to keep on hand when sweet cravings hit 🤍

Base
1 cup almonds
1 cup pecans
1 cup pitted dates (240g, excess moisture squeezed out)
¼ cup cacao powder
1 teaspoon vanilla essence
Pinch of salt
Peppermint Cream
1 cup soaked cashews
½ cup melted coconut oil
½ cup pure maple syrup
¼ cup coconut butter*
3–4 drops food-grade peppermint essential oil
1 teaspoon vanilla paste
Pinch of salt
Raw Chocolate
40g cacao powder
¼ cup pure maple syrup
¼ cup melted coconut oil
🤍 Method
1. Prepare the Base
Add almonds and pecans to your Thermomix and blitz for 10 seconds until fine.
Add dates, cacao, vanilla and salt. Process at Speed 8 for 10 seconds until the mixture forms a sticky dough.
Press firmly into a lined brownie tin and place in the freezer while preparing the peppermint layer.
2. Make the Peppermint Cream
Add soaked cashews, melted coconut oil, maple syrup, coconut butter, peppermint oil, vanilla and salt to your Thermomix.
Blend at Speed 5 for 20 seconds, scraping down if needed. Continue blending until completely smooth and creamy ✨
Spread evenly over the chilled base and freeze for at least 1 hour, or until firm.
3. Prepare the Raw Chocolate
In a small bowl, whisk together cacao, maple syrup and melted coconut oil until smooth and glossy.
Pour over the set peppermint layer and return to the freezer until fully firm.
4. Slice & Serve
Allow to soften slightly before slicing into 12 even pieces (3 x 4 grid).
Enjoy straight from the fridge or slightly softened for that perfect creamy texture 🍫🌿
