⏱️ Time Required

Prep Time: 25 minutes

Soaking Time: Overnight (8–12 hours, inactive)

Freezing Time: 2 hours

Total Time (excluding soaking): ~2 hours 25 minutes

🛒 Ingredients

Base

1 cup raw almonds

1 cup cashews, soaked overnight and drained

6 pitted Medjool dates

2 tbsp coconut oil, melted

Caramel Layer

5 pitted Medjool dates

120 g pitted dates, soaked overnight and drained

1¼ cups raw cashews, soaked overnight and drained

¼ cup coconut oil, melted

⅓ cup maple syrup

½ tsp table salt

Raw Chocolate Topping

40 g cacao powder

½ cup maple syrup

½ cup coconut oil, melted

To Finish

Flaky sea salt, for sprinkling

🥣 Method

Prepare the base

Line a small square baking tray with baking paper, leaving some overhang for easy removal later.
Add the almonds and drained cashews to your Thermomix bowl and blitz until finely ground. Scrape down the sides, then add the dates and melted coconut oil. Process again until the mixture comes together and forms a slightly sticky dough.

Press into the tray

Transfer the base mixture into the lined tray. Using the back of a spoon or clean hands, press it down firmly and evenly to create a compact base. Place the tray in the freezer while you prepare the caramel layer.

Make the caramel layer

Clean and dry the Thermomix bowl. Add all caramel ingredients and blitz on high until completely smooth and creamy. Stop to scrape down the sides as needed — the mixture should resemble a thick, glossy caramel with no visible lumps.

Assemble the slice

Remove the tray from the freezer and spread the caramel evenly over the base, smoothing the top with a spatula. Return to the freezer for 10–15 minutes to slightly firm up.

Prepare the raw chocolate

In a bowl (or Thermomix), combine the cacao powder, maple syrup, and melted coconut oil. Mix until smooth and fully combined.

Finish and freeze

Pour the chocolate layer over the caramel and gently tilt the tray to spread evenly. Sprinkle with flaky sea salt. Place the slice back into the freezer for at least 2 hours, or until completely set.

Slice and serve

Once firm, remove from the tray and slice using a sharp knife (slightly warmed for cleaner cuts). Store slices in the fridge or freezer.

🥣 Ingredient Notes

🍯 Medjool Dates
Naturally sweet with a soft, caramel-like centre, Medjool dates are ideal for creating a smooth date caramel. They’re less fibrous than other varieties, which helps them break down easily. For best results, use dates at room temperature.

🍫 Unsweetened Cocoa Powder
Used in the top layer to create a rich chocolate flavour without added sugars. Choosing unsweetened cocoa allows you to control the sweetness while keeping ingredients simple.

🌰 Almonds
Either raw or toasted almonds work well in this recipe. Toasted almonds add a slightly deeper, nuttier flavour, while raw almonds keep the taste lighter and more neutral.

🥜 Natural Peanut Butter
Any natural peanut butter is suitable — just be sure to check the ingredient list and choose one with no added sugars or oils. Using peanut butter at room temperature helps it blend more smoothly.

🍁 Maple Syrup
Adds natural sweetness and depth of flavour to both the date caramel and chocolate layers. Pure maple syrup can be substituted with a sugar-free alternative if preferred. Lakanto Maple Syrup is a good option and is readily available at Woolworths.

🥥 Coconut Oil
Helps bind the ingredients together and creates a smooth, set texture once chilled.

🧂 Sea Salt
A small amount enhances flavour and balances the natural sweetness of the ingredients.
