🛒 Ingredients
Base
1 cup raw almonds
1 cup cashews, soaked overnight and drained
6 pitted Medjool dates
2 tbsp coconut oil, melted
Caramel Layer
5 pitted Medjool dates
120 g pitted dates, soaked overnight and drained
1¼ cups raw cashews, soaked overnight and drained
¼ cup coconut oil, melted
⅓ cup maple syrup
½ tsp table salt
Raw Chocolate Topping
40 g cacao powder
½ cup maple syrup
½ cup coconut oil, melted
To Finish
Flaky sea salt, for sprinkling
🥣 Method
Prepare the base
Line a small square baking tray with baking paper, leaving some overhang for easy removal later.
Add the almonds and drained cashews to your Thermomix bowl and blitz until finely ground. Scrape down the sides, then add the dates and melted coconut oil. Process again until the mixture comes together and forms a slightly sticky dough.
Press into the tray
Transfer the base mixture into the lined tray. Using the back of a spoon or clean hands, press it down firmly and evenly to create a compact base. Place the tray in the freezer while you prepare the caramel layer.
Make the caramel layer
Clean and dry the Thermomix bowl. Add all caramel ingredients and blitz on high until completely smooth and creamy. Stop to scrape down the sides as needed — the mixture should resemble a thick, glossy caramel with no visible lumps.
Assemble the slice
Remove the tray from the freezer and spread the caramel evenly over the base, smoothing the top with a spatula. Return to the freezer for 10–15 minutes to slightly firm up.
Prepare the raw chocolate
In a bowl (or Thermomix), combine the cacao powder, maple syrup, and melted coconut oil. Mix until smooth and fully combined.
Finish and freeze
Pour the chocolate layer over the caramel and gently tilt the tray to spread evenly. Sprinkle with flaky sea salt. Place the slice back into the freezer for at least 2 hours, or until completely set.
Slice and serve
Once firm, remove from the tray and slice using a sharp knife (slightly warmed for cleaner cuts). Store slices in the fridge or freezer.
