🥥 INGREDIENTS
¾ cup sliced almonds
1 tablespoon chia seeds
1⅓ cups unsweetened shredded coconut (reserve ⅓ cup for rolling)
1 cup dried pineapple pieces
10 pitted dates
1½ tablespoons coconut oil
Pinch of sea salt
🍍 METHOD

Add almonds, chia seeds and 1 cup of shredded coconut to a food processor. Pulse until roughly chopped.

Add dried pineapple, dates, coconut oil and sea salt. Process until the mixture forms a sticky, dough-like consistency.

Roll into bite-sized balls and coat in the remaining shredded coconut.

Refrigerate for at least 1 hour to firm up before enjoying.
